Collections

Shun knife collections, by line.

Six lines share one workshop, one 16-degree edge, and one standard of finish. The difference is the steel, the handle, and how the blade reads in the hand.

The six lines

Find the Shun that fits your hand.

Start with the steel and the handle. Classic and Premier share a VG-MAX core. Dual Core and Shiranami add a second core and more layers. Kanso strips the finish back. Sora is the simplest way into the family.

Shun Classic chef’s knife with Damascus blade and dark handle

VG-MAX · 68 layers · 16° edge

Classic

Dark ebony PakkaWood, a D-shaped handle, and a blade that has been in home kitchens since 2002. If you want one Shun and no ceremony, start here.

Shop Classic
Shun Premier knives arranged on a dark surface

VG-MAX · 68 layers · tsuchime finish

Premier

The same steel as Classic, finished with a hammered tsuchime surface and a walnut PakkaWood handle. Food releases more easily; the knife looks the part.

Shop Premier
Shun Dual Core knives with layered Damascus blades

VG10 over VG2 · 71 layers · 16° edge

Dual Core

Two cores, 71 layers, and a geometry built to keep a fine edge through long prep. A quieter knife than its layer count suggests.

Close view of the wave Damascus pattern on a Shun Shiranami blade

Dual core · 71 layers · Prussian blue micarta

Shiranami

The wave pattern is forged into the blade, not printed on it. A blue micarta handle and a 71-layer Damascus face make this the most recognisable Shun line.

Shop Shiranami
Shun Kanso nakiri with flat blade and dark tagayasan handle

AUS10A · tagayasan handle · 16° edge

Kanso

No layers, no shine. A single steel, a thin grind, and a dark tagayasan wood handle. Kanso is for cooks who want the blade to speak first.

Shop Kanso
Shun Sora santoku with composite blade and textured handle

VG10 composite edge · 420J cladding

Sora

A composite blade made from a VG10 edge welded to softer 420J steel, with a textured handle that keeps its grip when hands are wet.

Sets & blocks

Shun knife sets, built around real work.

A set should cover the cuts you make, not fill slots you never reach for. Every block set includes free lifetime sharpening.

Chef’s knives

The one knife that does most of the work.

An 8-inch chef’s knife handles onions, herbs, protein, and squash. These four are the straightest route to a Shun edge.

Santoku & nakiri

For cooks who work mostly at the board.

A santoku is the three-purpose blade: slice, dice, mince. A nakiri is flatter and thinner, made for vegetables and little else.

Steak knives

A better knife at the table.

Damascus blades, balanced handles, and four to a set. These are the knives guests notice before the food arrives.

Utility, paring & bread

The knives that finish the work.

A paring knife for the off hand. A long serrated edge for crust without crushing the crumb. Small tools, used daily.

The long view

One knife, or the whole block.

Every order ships direct from Tualatin, Oregon, with free lifetime sharpening behind it. If you are choosing between lines, start with the knife you will use most.
